Chatting Up Top Chef Fabio Viviani

By Nycole Sariol/Photo courtesy Siena Tavern Bravo’s Top Chef Season Five summoned some very distinguishable TV personalities to its screen, plashing that touch of drama necessary for any triumphant reality show dish. Though the claws were sharp and the fights were prevalent, there was but one who maintained his cool all the while – oddly enough – stirring the pot. The Italian chef, who wore a smile more than he wore an apron, Fabio Viviani, indubitably rendered that Italian fire that melted the hearts of many during season five Top Chef New York and Top Chef: Allstars. After nation-wide exposure on an Emmy Award winning show, it’s only natural that raved success ensues, right? Not for Fabio. For him, the show did not define his career as a chef. It merely gave him the tools to build future relationships with people whom he might not have otherwise. “My life is the same. It [Top Chef] just made it busier,” the chef told us right before he and newest restaurant, Siena Tavern snagged up the People’s Choice Award and Best Taste of Florida at the OBIES in Ft. Lauderdale. The devilishly charming chef, who has opened California hotspots like Café Firenze and Firenze Osteria and Siena Tavern in Chicago, no doubt holds the gold belt of encapsulating the perfect chef-restaurateur combo. But those aren’t his only accolades gaining him colossal recognition. On top of multiple and expanding restaurants in the works, Viviani also has the bragging rights to some handy cookbooks like the New York Times Best-Seller, Fabio’s Italian Kitchen and another due out later this year, following the vibe of the former. Like any good, homegrown Italian boy, raised on a nice glass of Chianti instead of a tall glass of warm milk, Viviani is expected to launch his first line of wine. “We love to drink, but we wanted to create a product that people are passionate about,” he says. Apart from the launch of his anticipated wine line and the sequel to his best-selling cookbook, it’s the opening of Siena Tavern Miami that breaks the cooking catalyst’s chart-topping news. The sister restaurant to his Chicago location, is set to open fall of this year in South Beach’s old China Grill, between Washington Avenue and 5th. Viviani says to expect loads of color and, of course, fashion, because what’s a Miami restaurant without the duet?  With so many whirl-winding ventures teeming around him, how does this guy find the time for a little shut-eye? “I don’t. I gave it up a while ago,” chuckles the Top Chef’s favorite season five contestant. Miami Real Estyle – Sofia Joelsson – SoJo Design Miami Beach

By Sherri Balefsky/Photography by Imani Ogden Stepping into the SoJo Design offices in the heart of South Beach is like stepping onto an oasis during a major MacArthur Causeway traffic jam. Sofia Joelsson, the firm’s founder and creative director, arrived in Miami late last night after her flight from New York was delayed four hours. You’d never know; she is blithe and cheerful and—with no makeup, nonetheless—looks incredibly well rested. From just a quick glance around her office, it is clear Joelsson has impeccable taste—so much so you’d think she spent years studying at an accredited design school. But Joelsson grew up in a small town in Sweden where she reveals, “People are very much do-it-yourself. A career in interior design is not something that is really even thought of.” Instead, the former Miss Sweden grew up thinking she wanted to be an actress. She spent time living in Germany and the Dominican Republic before making her way to Miami. “I was modeling and doing commercials,” she says. “But people kept asking me who my decorator was…So thirteen years ago—to this day, actually [June 9, 2014]—I started SoJo Design.”  With no formal training, Joelsson has managed to make a name for herself in the world of interior design, having worked on some of the most impressive luxury properties in Miami, New York City, and Dallas, Texas, among others. This includes penthouses at the Setai, Il Villagio, and 1500 Ocean Drive in South Beach; the Ritz-Carlton, Dallas; and Manhattan’s Walker Tower (where a penthouse recently sold for a reported $30 million). “I found a niche in penthouses,” she says. But her portfolio also includes luxury condominiums at Canyon Ranch, Miami Beach, One Bal Harbor, and the Four Seasons, Miami, and multimillion-dollar estates in affluent neighborhoods in places like Star Island and the Hamptons. She’s also designed interiors for hotels, office buildings, restaurants, and even private jets. The SoJo Design aesthetic is sleek, chic, and modern. Each room exudes an effortless balance of color, texture, shape, and open space. Joelsson has an affinity for natural materials like wood, stone, and leather, and for neutral tones such as white, black, and beige. While an estate she designed in Dallas has a much different vibe than, say, one of her South Beach penthouses, the signature SoJo je ne sais quoi permeates throughout each endeavor. In total, SoJo Design has worked on more than 150 projects, representing close to a billion dollars of real estate. The success has led Joelsson to expand her business into other areas of creativity, which includes the launch of a design-inspired magazine, Curated Living. “I did [the magazine] to challenge and inspire myself, and in turn, inspire others,” she says. “It was originally only supposed to be online [www.curated-living.com], but my clients and advertisers were all asking for copies.” For the first issue, aptly named “The White Issue,” Joelsson curated pieces from her favorite design and fashion houses to put together a series of white-themed vignettes. The next issue, slated for Summer 2014, will have both equestrian and nautical themes. Along with being editor-in-chief of a burgeoning magazine, Joelsson is working on a new textiles line, which she anticipates will be part of a larger Sofia Joelsson Home, Anywhere collection. She also launched an e-commerce site, Cudesso (www.cudesso.com), which offers a handpicked selection of her favorite furniture and home accessories from around the world. And, if that wasn’t enough, Joelsson is also in talks with producers about a potential TV show. With so many projects evolving simultaneously, it’s no wonder Joelsson says the one person she’d love to meet is Martha Stewart. “She is such an inspiring entrepreneur and businesswoman—and she’s had a very interesting life!” Much of Joelsson’s inspiration comes from travel. Her favorite places include Mykonos and Santorini, Greece; and Capri, Italy, where she says she visits every year. Aside from traveling, in her free time (though it would seem she has none!), Joelsson loves to entertain. She likes having friends over to watch movies on her terrace where she has a full-size chess set and a popcorn machine. “A lot of my friends have kids,” she confesses. “I have four-legged kids.”  She gushes about her shih-tzu mix, Caspar, whom she rescued five years ago. He is by her side at the office on most days. “I think it’s important to create a fun work environment,” she says. “We’re here very long hours some days, so you have to keep people loving what they do.” The SoJo Design team currently includes five designers, plus an extended staff that helps support her in her multiple endeavors.  And despite her laundry list of accomplishments in just 13 years, Joelsson remains down-to-earth and remarkably humble. “The United States is still, to me, the land of opportunity,” she says.“Miami is special because it’s only something like thirty percent developed—as opposed to New York, which is like ninety-nine percent developed. There’s so much opportunity and growth…What Craig Robins is doing with the Design District is pretty incredible. It’s cool to be a part of a growing design community.”  So what’s her best piece of advice for anyone who wants to follow in her footsteps? “Follow your passion. Starting her career at just 11 years old, the Miami native is now a bona fide star. She continues to push creative boundaries, even recently starring as the beautiful love interest of Latin pop singer Chayanne in the music video for his hit single “Humanos a Marte,”proving that her possibilities are endless. But apart from her success, stunning good looks, and ridiculously close resemblance to Angelina Jolie, Bleier is insanely down to earth, making her not only lovable for her work, but for who she is as a person. Bleier’s first run-in with a modeling agency came when she was just in middle school. After being bullied by her classmates for her height, Bleier’s mother decided to take her to a modeling agency in South Beach to prove to her that tall is beautiful. “She wanted to show me that, one day, you can make something of your height,” says Bleier. After being signed immediately to the agency, Bleier was already traveling for work. “My mom would come with me everywhere, we went to places like Italy and Paris,” says Bleier. Despite Bleier’s early success, her career came to a halt when she decided to attend college at the University of Florida to study history. But after graduating during the recession, Bleier found it difficult to find work. While searching for a job in her field, Bleier decided to give modeling another shot to generate some extra income. “One thing led to another and it turned into a full time thing,” says Bleier. After moving back to Miami and signing with Front Model Management, Bleier was catapulted back into the modeling scene, doing fashion shows and photo shoots in Miami and across the world. But this high fashion model loves living the low-key life. Apart from spending time with her high-school sweetheart and fiancé, Bleier loves to garden and read books. “I read constantly,” says Bleier. She also likes to explore the burgeoning art and design districts. “I absolutely love to dance. But other than that I’m more of a low-key, go to a bar, have a beer and hangout type of person.” Bleier also makes sure to get her daily exercise by doing fun activities she truly enjoys. “I have a very active lifestyle. I take my dog for one hour walks, and my fiancé and I like to go kayaking.” Bleier’s one guilty pleasure? Pizza. “My fiancé is in the restaurant business. His parents own Steve’s Pizza, so he manages that. It’s good and bad because every night I fight the urge to eat pizza, which I usually end up eating pizza once every day!” she says while laughing. Although her modeling photos and videos are all over the media and internet, Bleier prefers to stay away from all the social media hype surrounding her career. “I feel like I was supposed to be born at another time. I love real conversation, and just, seeing a person’s face and engaging their reaction.” While it’s obvious that Bleier is a powerful force in the modeling world, what seems most attractive about her is the pure effervescence that shines through Bleier’s approachable spirit.

Miami Real Estyle – Meet Chad Carroll – Star Of Bravo’s New Series Million Dollar Listing Miami

By Sherri Balefsky Move over Wade, Bosh, and James, there’s a new trifecta in town. And they are about to explode onto Miami’s pop culture scene. Million Dollar Listing Miami, a spinoff of Bravo’s popular Million Dollar Listing reality series, debuts on June 25. The show follows three of Miami’s top power brokers—Chad Carroll, Samantha DeBianchi, and Chris Leavitt—as they dominate the South Florida real estate market. Less than two weeks away from the premiere, a calm, confident Carroll discusses the upcoming season. Carroll moved to Miami in 2008, a time when real estate sales were struggling. “I didn’t know a single person,” he recalls. But the 24-year-old Ohio native was determined to make a name for himself in the industry. “I became an expert in every single area of Miami. When people were running away from the business, I was right in the middle of it.” Fast-forward to today: South Florida real estate is booming, and Carroll is a power broker in every sense of the word. He’s closed over $200 million in property sales, and for the past two years has been named Douglas Elliman’s top producing agent in South Florida (and one of the firm’s top 1 percent nationwide). So, when Bravo decided to expand the MDL series to the Magic City, Carroll fit the bill perfectly. “They knew what they were looking for [in a cast member] and I met that criteria,” he says. “My sales experience and my track record show that I’m better than anyone in Miami. As soon as the episodes start to air, you’ll see how my approach to real estate is different from anyone else out there.” Carroll doesn’t just sell properties; he sells the lifestyle that goes with them. “People come to Miami to live their dream,” he says. “Beautiful beaches, beautiful people, yachts, planes, cars…I sell the dream that comes with owning a property in Miami.” It’s this approach that has led him to secure some of the most lavish properties in the area, with clients so exclusive, he respectfully must keep their names confidential. “I have one of the best reputations in Miami—both business and personal,” he says. “My clients know they can trust me. I’m available to them 24/7. They are my friends, my family. There’s nothing I wouldn’t do for them.” Carroll insists this is evident from the first episode. “People will see just how hard I work…Nothing is handed to me.” While he admits it was strange at first to have cameras following him, after a few weeks, it was second nature. “This season is going to be a little different,” he reveals. “We represent properties from Palm Beach down to the Keys—waterfront homes, condominiums, luxury developments, new construction… We give viewers a taste of everything South Florida has to offer. And with property values on the rise, the competition is fiercer than ever.” This will also be the first time the series will have a female cast member. “I knew Sam [DiBianchi] before the show,” Carroll says. “She has a very strong personality; there is a little tension because we have conflicting selling styles.” As for Leavitt, they both worked at Douglas Elliman, but they didn’t know one another. “We end up co-listing a property. You’ll see how it all transpires from the beginning of the season to the end.” As Miami property sales continue to break records, Carroll has more drive than ever to keep moving up in the industry. Every year, he sets out to double sales from the year before. “I love real estate. I breathe and sleep it—I dream about it!” Does the same go for his personal life? (The season’s trailers hint at a possible engagement.) For now, it’s mums the word. “My girlfriend, Jen, is a very important part of my life,” he says. “You’ll see on the show how our relationship grows.” No matter what, it’s safe to say that MDL Miami will bring the same drama and entertainment as it did for Los Angeles and New York. “The three of us have three completely different personalities,” Carroll says of the cast. “You’ll have to tune in to see how it all unfolds!” ■ Click Here To View This Story In Our July/August Issue

Top Recruiter Miami Is Big Business

DOWN TO BUSINESS WITH CREATIVE DIRECTOR & EXECUTIVE PRODUCER CHRIS LAVOIE What is your position within the show Top Recruiter? I am the Creator & Executive Producer of the show. What is the show Top Recruiter about? Top Recruiter is a reality series – where 6 recruiters come together and take on a series of challenges based on the job market. We aim to showcase the process of what happens behind the scenes of a recruiters job. Through that process, we want to give job seekers some insight and tricks of the trade so they may implement some in their job hunting endeavors. Plus there’s great drama between these huge personalities. What category does Top Recruiter fall under in reality TV, is it a planned or a followed story? I am a big fan of the “unexpected”! This is the reason why we have no script on set. As the executive producer, I read the human behavior on set and develop the day’s filming format. How did you come up with the idea of Top Recruiter? The idea of Top Recruiter was born in the dawn of the recession. We realized then, like many people did, that things were about to change- quickly. We also realized that while many people were losing their jobs and homes, there were other opportunities as a direct result of this recession. We knew that many people simply did not have the inside knowledge that a recruiter has. We wanted to deliver this information in a way that was entertaining so that people would watch and learn and hopefully apply the information to their situation and thrive. There was so much doom and gloom hovering over us as a country that we really felt something should be done. I have always had a passion for film, I just took my two passions and married them. What’s the process of casting your stars? 1. The single most important characteristic is knowledge base. For us, we want the show to be credible. We want to educate and only people with real expertise can really do that, right? 2. Secondly, this is a show – and shows need to be entertaining to keep any attention by the viewer. So we look for bold personalities who don’t cringe at the sight of a camera. They simply need to be comfortable in front of the camera, not everyone can do that. 3. Confidence, Confidence, Confidence!! What job markets do Top Recruiters target? EVERY Industry. What are your Top Recruiters competing for amongst each other? The “reputation” of being the world’s best. Every winner has seen a tremendous elevation in their career and personal brand. Once a winner is selected what is the Grand Prize? A dinner with me. Did I just say that?! Seriously, they win something pretty – Job Security They really could work at any Fortune 500 company if they wanted to. Just as long as they still perform to their abilities. Has Top Recruiter Miami achieved the success you were hoping for? We couldn’t be happier with the achievements of Top Recruiter. We set out to help a very important industry at a very important time in our country’s history. We feel that we helped shed some light on how to get ourselves out of a rut. There have been a number of publications that have been written about the show, and in them, I find the meaning of success. What inspires you the most in making your business decisions? As I turn 40 years old, I want to work on projects that make sense in 2 areas. One, it needs to “move” me. I need to be “turned” on. There needs to be a “risk” factor. Secondly, it needs to make sense financially. Since I will be working 95% of the time raising the funds for each reality series or film I am working on – I need to see that my time is valued. One On One With Red Carter

Swimwear designer Red Carter makes a giant splash in the fashion industry, and it’s only the beginning.  By Katie Jackson/Photo courtesy of Ken Pao In 2003, Miami gained a designing phenomenon when Red Carter left his native California to take his talents to the Magic City.  After working for major brands like Esprit, Guess, Victoria’s Secret, and Oscar de la Renta, Carter was finally ready to break out on his own. Inspired by Miami’s glamorous Art Deco style, Carter created and developed his swimwear brand out of his Miami Beach apartment. Now, Carter’s fashionable and sexy swimwear has catapulted him to the top, with numerous features in leading high fashion magazines and a large celebrity following.  Sadly for Miami, Carter recently relocated to New York City to continue growing his burgeoning brand, but will always have a special place for Miami in his swimwear and in his heart. For Carter, the desire to design clearly pulses through his veins. As a young child, Carter was already creating sketches for what would soon lead to a career in fashion. “I started drawing sketches of naked ladies, and my mom was like, ‘you can’t have all these pictures of naked ladies laying around!’ So she said, ‘why don’t you put clothes on them?’ So I started drawing dresses and watching vintage movies, and that sort of inspired me to see the art of fashion in movement,” says Carter.  He then went on to study at the prestigious Otis College of Art and Design in Los Angeles. After his graduation, Carter gained extensive experience working for top fashion brands and designers. But after taking a job with a start up company and being let go soon after, Carter decided it was time to take control of his career. “I found myself without a job, and I decided that I wanted to have my own message. So, I started my own brand,” says Carter. After moving to Miami 11 years ago, Carter says he was given a rare opportunity to “set the tone for luxury living.” Carter capitalized on the growing niche for high-end swimwear, creating polished yet glamorous pieces with a fun Miami edge for the fashionista with a flexible budget. “My customer is looking for a getaway, and they want to stand out. They definitely don’t want to wear what everyone else has,” says Carter.  Carter began designing his brand on his own dime and started selling his pieces out of his apartment. “We would do little shows, sell them out of little stores. I just paid my dues.” But it wasn’t long until Carter’s designs starting receiving massive attention.  Popular retail stores started carrying his designs and magazines began giving him features. Then in 2004, Carter participated in the very first Mercedes-Benz Fashion Week Swim, launching him and his designs into an international spotlight. Today, Carter’s designs have been featured in multiple high fashion glossies, and have been spotted on notable celebrities like Rihanna, Jennifer Aniston, and the Kardashian sisters. One of his suits was even worn by Beyoncé in her music video “Grown Woman” off her mega-hit self-titled visual album “Beyoncé.” Upon finding out about the video, Carter said he was ecstatic. “I was like, are you kidding me? It was a great couple of minutes. I did the happy dance. It was kind of the most funny, anxious moment, but it was really great.” But even with the massive exposure, Carter stays humble. “I’ve never really taken it for granted. I’m always very flattered,” says Carter of the all the attention. “You’re only as good as your next design. So I’m very honored, but I always think to myself, what is possibly next? That was great, who else now? How else can I affect people?”  Carter has now relocated to New York City after joining the outerwear manufacturer Amerex Group. Joining Amerex Group has not only helped Carter grow his business, but also allowed him to be removed from the operations of the company and solely dedicate himself to what he truly loves: design. Carter is now able to work on multiple projects at once, including continuing to design suits for Jessica Simpson’s swimwear line, a project he was approached to do a few years ago.  As for when he’s back in Miami, you may catch Carter relaxing at The Standard or grabbing a bite to eat at Yardbird Southern Table & Bar. “It’s so bad, but so good,” Carter says of the restaurant. While he’s not particularly into the party scene, Carter says he loves to people watch when in Miami. “I’ll definitely relax by the local pools and watch what people are wearing and what their lifestyles are all about. That’s my little secret weapon.”  Although Carter is no longer living in Miami, he will be returning this summer to participate in the MBFWS 10th anniversary, but will not be doing a show. “It’s kind of an honorary participation,” says Carter.  Instead, he will be showcasing one of his prints from one of the last runway shows he did for MBFWS, which happens to be the piece featured in Beyoncé’s video.  While it’s clearly evident that Carter has made an enormous indent in the fashion industry, he remains the perfect balance of humble, passionate, and determined.  “I’ve had a great journey. I’ve had great seasons and I’ve had seasons of struggle. I think in the end, persistence is a true reward. Persistence is what you have to focus on. And not being a flash, but being a constant. For the award winning broker, seamlessly globalizing the 305’s real-estate market, while helming 175 agents deemed a lucrative cakewalk to the philanthropic enthusiast. Although a fluent speaker in three languages – French, Spanish, and English – the property powerhouse fancies one language in particular – selling; she fills us in on her landholdings hypnosis that has foreign affairs and local buyers alike, buzzing. MSM: Did the credit crisis of 2008 have a significant impact on your business and ability to sell homes? In 2008 we had over 46,000 properties available for sale on the market. Clients were asking for rentals, rentals, rentals!! Prices kept dropping and real estate offices were closing. Banks were not lending, mortgage brokers were all closing their companies. It was a very sad, difficult time and a tough process to get anything sold! MSM: What makes Century 21 Premier Elite Realty successful? At the end of 2011 we noticed that sales were up 4 percent from 2005 which was the boom year. A shift was beginning. This shift we were experiencing was due to the foreign buyer. Miami was suddenly on everyone’s radar. The Wall Street Journal named us the “new global city” 62 percent of the buyers now buying in Miami are foreign buyers and 90 percent of those buyers are buying cash. What makes our company different is we are an international company. We focus on foreign clients from all over the world. 48 percent of the business done by Century 21 is outside of the US. We are the most recognized real estate brand in the world. MSM: Describe your average client profile in the Miami market. Are they in the market to invest or to live in the property? The average Miami buyer is either from one of the large northern cities like New York, Chicago, Boston and Washington DC or they come from other countries in Europe, Asia and South America. We currently have a lot of traffic from Brazil, Argentina, Venezuela, France, Columbia and a considerable number of buyers from Canada, Mexico, Russia and China. They want to invest in properties in Miami for security, safety, political, and financial reasons. Most foreign buyers feel more comfortable investing money in Miami than in their own country. They also see the incredible potential in appreciation as this city is transforming at an extremely rapid pace. Many buyers come to invest in America, but others purchase their properties as full or part time homes. MSM: How is the Miami luxury real estate market rebounding since the 2008 housing crash and where do you project pricing trends to move over the next 2 years? Wealthy buyers love the international feel that Miami provides along with sunny weather, gorgeous beaches, thriving nightlife, glamour, entertainment and global business opportunities. It’s a Chef Thing

Text & Photography by Nycole Sariol Crowds spilled into South Beach by the dozens for South Beach Wine and Food Festival 2014. Only Miami could pull off the unabated gathering of celebrity and local chefs, big-time sponsorship from heavy-hitters like Whole Foods, and live performances from American classics like Sammy Hagar, jam-packed into one mini-weekend. However, the weekend was anything but mini. Celebrity faces like Anthony Bourdain and Emeril Lagasse made palatial appearances to help monumentalize the four-day event, along with other star-studded chefs such as Andrew Zimmern, Giada De Laurentiis, and Eric Ripert. A bevy of tents and booths secured the powdered beaches, separating them from the tourist-driven chaos of Ocean Drive with but a mere sidewalk. Foot-traffic densely invaded every square- inch of the designated grounds that read SoBeWFF overhead the said premises. A fete of household names like Barilla seized the influx of booths, generously stacking plates full of pastas and fresh shrimp salads, catering to the mile long lines of famished tummies, all lusting for the same thing – food. The sin of gluttony was heavily abetted while local and non-local patrons alike partook in wine tasting, refreshing alcoholic consumption, and hearty snacks under the immensity of the Whole Foods Grand Tasting Village tent. Local bars and restaurants waited on the thousands hand and foot, shoving their most prized and signature dishes down their throats, restoring their energy to down some more delicacies apace and throw back an even bigger wave of liquor the second time around at booth destinations like the Cruzan Rum Bar – a SoBeWFF fave! Within the brimming confines of this tasting village, one was bound to bump into mega-mouths like Mr. Nice guy and this year’s Burger Bash winner, Michael Symon, at the Costello Booth, featuring his Bonus Burger of the day. Outside of the Whole Foods circus of food fetishes and freaks, Anthony Bourdain sat along side his buddies and culinary accomplices to talk all things New Orleans and the HBO series Treme – to which Bourdain will take the title of writer monkey for the series’ upcoming season – as aspiring literates and food junkies swooned over their fearless leader. But as Bourdain bid adieu to his faithful admirers, and night swallowed day, legends like Sammy Hagar were joined by kitchen extraordinaire Emeril Lagasse to host Emeril and Sammy’s Rockin Beach Party presented by Sammy’s Beach Bar Rum and Cabo Wabo Tequila. The event sat right outside the world-class Delano Hotel where folks with a distinct penchant for pastilitos – a Cuban pastry usually replete with guava and cream cheese – and other fried morsels of the Cuban variety, enjoyed bite-sized versions of Versailles signature dishes in booths that occupied the outskirts of the celebrated event. When it came time for song and dance, the host of the night, Emeril Lagasse, gave a warm welcome to his long-time friend and musical mastermind, Sammy Hagar. Loud stage lights and a sea of glares from forty-something year-olds’ iCameras illuminated the night. The act of inebriation and eating oneself into oblivion wasn’t the only form of entertainment on the menu that weekend. While the X, Y, and Millennial generation had their “adult time” on the beach, the kiddies were given a special time of their own. On the other side of The MacArthur Causeway on Parrot Island, kids of all ages awoke the chef from within, as Chef Lorenzo Boni from Barilla introduced a fun yet healthy cooking class for youngsters to understand the importance of maintaining a balanced diet. Joy inordinately inhibited the children’s faces when they caught news of what would be cooked up in Boni’s cauldron of goodies. Orzo and Zucchini Lasagna were the Italian cuisine contenders that set the perfect balance of showing the kids that it is possible to gorge themselves while doing so in a nutritious manner. While Chef Lorenzo and his assistant and nutritionist, Ana Rosales, treated the kids to knowledge, outsiders found leisure by getting their faces painted and messing around in the fun zone with their besties. Memories of affinity left a stamp on the weekend best known for its wine and food. Along the way, we look back on and observe the four tons of protein engulfed; the 100 bunches of cilantro garnishing our plates, and the 3,860 hours of preparation it took to create such a gastronomically momentous celebration by the people whom we trust day in and day out with our minds, our mouths, and our guts – the chefs; because at the end of it all, chef knows best. The Wayfarer of the Culinary World: Chef Alfredo Alvarez

By Nycole Sariol / Photography by Imani Ogden Once known as a river awash with darkness, perniciously welcoming the wrongdoings of drug-traffickers, Voodoo zealots, and spiritual, Santeria rituals, the Miami River’s banks have recently wiped its – then daunting – slate clean and sings a new aubade these days. The reasoning behind this jovial redemption: to shine light on Miami’s new hotspot, Seasalt and Pepper, and to serve as a culinary playground for Chef Alfredo Alvarez. “I was ready to come back to Miami,” Alvarez confesses about his 305 hiatus and the departure from his big-city tenure at Trattoria Dopo Teatro in New York. The chef’s comeback though impactful, was the breath of fresh air that the patrons of South Florida deeply beseeched – or a Mediterranean breeze. A bevy of the freshest sea-food, oven roasted pizzas, and Volcan clay casseroles flagrantly make up Chef Alfredo’s menu of simplistic inventions and add to the nautical, Mediterranean aura that hangs as sea ropes and a suspended installation turn chandelier innovated by local artist, Carlos Betancourt, depicting the history and ex-reputation of the Miami River. “I saw the place and I thought right away that the concept of the menu should be a Mediterranean cuisine where you feel like you’re in St. Tropez; you feel like you’re in Positano; you feel like you’re in Santa Margarita, Italy,” professes the world-class traveler/chef. Having spent most of his life abroad, bouncing from New York to Italy to Miami to New York for round two and back to Miami again, the Venezuelan-born chef has also experienced a real life at sea instead of the decorative one he portrays behind the walls of Seasalt and Pepper. “I decided to go work on a cruise ship as a consulting chef,” the chef recalls, “I stayed there for three years, traveling to places like Tahiti and then all over the world.” It was inevitable that this Lemuel Gulliver of the kitchen would come back with only the most profound flame of inspiration, serving as a compass that would lead him to his latest recognition and the masterful Seasalt and Pepper menu. However, Chef Alfredo isn’t the only one with a pocket full of “travelers’ tales”. For the food being brought out to the daily quintupling guests in tow of its tantalizing aroma, traveling is the norm. “We grab from all over the world,” the chef speaks of the fresh, upscale products being used day-in and day-out. “We fly the Black Cod from Alaska…the clams we bring from Manila…the Caputo flour from Italy.” That’s not including the savory vegetables that cross the country from California, save for the Heirloom tomatoes that hop over the backyard fence from Homestead. The Frankenstein amalgam of international ingredients accrue for the gastronomical makeup for such plates as the Octopus Plancha, a steadfast force and a propitious crowd-pleaser among the influx of Magic City locals and the musically royal that swarm the dining room tables like Beyoncé and Jay-Z. “There’s no where in the world you could find Octopus like that,” the tastemaker says of his tender, grilled octopus with a melt-in-your-mouth texture. Though the food evokes a sense of magic from within the Miami food-lover’s heart, the real magic is conjured up in the kitchen. “My chef de cuisine is Venezuelan, my pastry chef is from Turkey; one of my chefs is from Africa, another one from Italy, and another from France.” Joining Alvarez in his 200-person kitchen and intensifying the subject of international imports further. In spite of the obvious subtext gravitating toward traveling and worldwide everything, perhaps the main component behind the radiance being transmitted from Chef Alfredo’s hands is knowledge – accumulated knowledge. “This menu is my whole career; all thirty-six years of cooking put down on this menu,” romance beaming out of from his eyes, expelling innate love from his body and signifying the severity of his most prized possession and what it means to him. “This menu is my life, this menu is who I am.” Click here to view full story in our March/April 2014 issue.
